The 牛車水 Kreta Ayer Complex was built in 1981 as a part Singapore's urban renewal project of the 新加坡唐人街 Singapore Chinatown. It was renamed 牛車水大廈 Chinatown Complex in 1983/84. Hence, when the market and food centre within the complex was completed in that year, it was named 牛車水大廈巴剎和熟食中心 Chinatown Complex Market and Food Centre. 300 or more street hawkers from the surrounding streets were resettled to the newly completed $18 million complex in October 1983.
It started with over 300 stalls in the 1980s and subsequent renovations expanded the number to around 700 in total. More than 250 stalls on the second floor are dedicated to cooked food, and the area is so large that it is divided into different colored zones.
The SGD$6 (rm$21.10)  "招牌料湯 Signature Soup" should be Teochew style as it is from stall name "潮州街香菇肉脞麵 Teochew Street Mushroom Minced Meat Noodle Stall" which comes with a satisfying mix of:
魚丸 Fish Ball
豬絞肉 Minced Pork Meat 
豬肉片 Sliced Pork Meats
吊片 Dried Squid
豬油炸 Fried Pork Lard 
高麗菜 Cabbage
蔥粒 Green onions 
海藻 seaweeds
This stall is highly recommended and am sure their Signature Noodles should be good!
