"芙蓉老鼠粉 Seremban Loh Shu Fun" features 麵條具有更長 uniquely longer, 更有彈性 bouncier, and 略帶嚼勁的獨特特點 slightly chewy noodle strands instead of the 短而尖的鼠尾狀麵條 short, tapered rat-tail shape found in other regions. 芙蓉老鼠粉 Seremban Loh Shu Fun originated from a roadside stall under a big tree in Jalan Templer (near Jalan Temiang) in 芙蓉 Seremban, 森美蘭州 Negeri Sembilan, around 1948. The dish was popularized by a family-run business famously known as "姨婆老鼠粉 Yi Poh Lou Shu Fun", named after the 店主的姑婆 owner's great-aunt ("Yi Poh", meaning grandmother's sister) who 中國移民而來 migrated from China.
"紅麴豬肉丸 Red yeast pork balls" feature minced pork seasoned with 發酵紅麴米 fermented red yeast rice (hongzao), giving the meat a natural reddish hue, fragrant aroma, and a slightly sweet, savory flavor. The key ingredient of this style of pork ball is 紅麴米 Red yeast rice or red yeast lees (hongzao) are 紅麴菌發酵米的副產品 byproducts of fermenting rice with Monascus purpureus fungus.The use of 紅麴 red yeast rice and its 其發酵糊 fermented paste for 肉類菜餚著色 coloring and 調味 flavoring savory meat dishes spans over a thousand years among 漢族社區 Han Chinese communities. The culinary practice 傳入台灣 traveled to Taiwan via 早期福建移民 early migrations from Fujian province. In 新竹 Hsinchu, 台灣 Taiwan, local meatball (bawan) and pork ball vendors traditionally incorporate red yeast paste into the 賦予肉丸獨特的紅色 pork marinade to impart a distinct reddish tint, 天然的甜味 natural sweetness, and 濃鬱的風味 preserved depth.
