Thoughts: 巴巴甘露 Baba Ganoush (阿拉伯語短語 an Arabic Phrase) is a 地中海 Mediterranean 茄子醬 eggplant dip made from 烤茄子 roasted/grilled eggplant, 芝麻醬 tahini, 橄欖油 olive oil, 檸檬汁 大蒜 lemon juice, 鹽 garlic, and salt. Like 鷹嘴豆泥 hummus, it's delicious with 皮塔餅 pita or 新鮮蔬菜 fresh veggies, but its silky texture and irresistible smoky flavor set it apart.

The word "bābā" in "Baba Ganoush" in Arabic means "父親 father" and is also a term of "愛 endearment", while "ġannūj (Ganoush) could be a person's name. The word combination is also interpreted as "賣弄風情的父親 father of coquetry" or "放縱 indulged//縱容 pampered/ /調情 flirtatious 的爸爸 daddy" or "被寵壞的老爸爸 spoiled old daddy". It is not certain whether the word bābā refers to the 茄子 eggplant, or to an actual person indulged by the dish.
Variations of Baba Ganoush, as a national dish, that is popular in 希臘 Greece, 伊拉克 Iraq, 亞美尼亞 Armenia, 約旦 Jordan, 黎巴嫩 Lebanon, 巴勒斯坦 Palestine, 埃及 Egypt, 敘利亞 Syria, 土耳其 Turkey and some 北非國家 North African countries; with each country offering its unique recipe with a different name for "Baba Ganoush"!

Today's bread is likely a traditional Taboon bread, which is a type of 巴勒斯坦扁麵包 Palestinian flatbread (part of a collection of uniquely Palestinian recipes) baked in a 圓頂形粘土烤箱 dome-shaped clay oven called a taboon (or tabun). It's made from a simple dough of 麵粉 flour, 水 water/牛奶 milk, 鹽 salt, 糖 sugar, 酵母 yeast, and 油 oil. This type of bread is High Carb,  and probably good fat from the Olive Oil, Good source of Protein and Fibers. GI of this of bread is maybe around 90 (high GL) and therefore also high GL.
