Thoughts: Châteraisé is a 糕點店 patisserie from the 甲府市 Kofu, 山梨縣 Yamanashi Prefecture Japan (東京以西 West of Tokyo); it was founded in 1954 where in its early days, it was known for 今川燒 imagawa-yaki, a pancake like confection filled with 甜紅豆沙 sweet red-bean paste. The confectionary collaborates with Japanese farmers to use high quality ingredients for their cakes and desserts. Today it is one of the largest pastry chains in Japan, selling both Japanese and Western-style sweets, as well as bread. Their recent best seller is the “草莓奶油蛋糕 Legendary Strawberry Cream Cake” ( rich and yet light fresh cream that pairs together with the juicy sweet Japanese strawberries). With over 580+ stores opened in Japan and around 90+ stores world wide, the patisserie with immense popularity “Châteraisé” has found its way to Malaysia opening its first store in Isetan KLCC on March 2016.

Some of the cakes are made In-house as there is a kitchen here at the Cafe, but many products are also made locally in Japan, and then shipped directly to here through the 冷鏈直運 Cold chain Logistics. Both the "宇治抹茶蛋捲 Uji Matcha Cream Roll" and "抹茶持ち Matcha Mochi" are imported from Japan, and still taste good. There are at least 200+ kinds of desserts with all the products made in Japan with specially selected fresh ingredients including Traditional Japanese sweets like 大福 Daifuku, 麻糬(持ち) Mochi, 和菓子 Wagashi, 日本銅鑼燒 Dorayaki and many more. Western influenced cakes are plenty like 水果蛋糕 Fruit Cakes, 千層可麗餅 Mille Crepe, 奶油泡芙 Cream Puff, 冰淇淋 Ice Creams, 抹茶和巧克力甜點 Matcha and Chocolate sweet items, 水果果凍糖果等 Fruit Jelly sweets etc.
Many Japanese cakes have a foreign origin with its influence arrived to Japan after the Edo Period that the country opened its frontiers internationally. But Japanese people has been adapting these cakes to their own taste and preference resulting in many Japanese cakes to be creamier and less sweet than Western ones; this is likely because Japanese people tend not to enjoy the excessive sweetness. AND Japanese cakes tends to be smaller in size as they are made more for individua servings.
Of all the Japanese traditional sweets, 持ち Mochi is probably one of the oldest as it first appeared over 2000 years ago; BUT the first recorded accounts of mochi being used as a part of New Year's festivities are from the 平安時代 Heian period (794-1185). This traditional Japanese rice cake were initially used as an offering to the gods, and afterwards were cut into small pieces to be shared among family members for good luck and good fortune. Mochi continues to be one of the traditional Japanese sweets eaten around 日本新年 Japanese New Year (January 1 every year), and is sold and consumed in abundance around this time.Food today: 7 / 10 👍👍😋😋
