Thoughts: Interesting fact: In the Chinese Lunar Calendar, a month in the Chinese Calendar spans a single 朔望月 Lunar Cycle (the Chinese/Lunar Calendar is in-line with the Moon Phase). The first day of the month begins during the 新月 new moon, when no sunlight falls on the lunar hemisphere that faces the Earth. A lunar cycle, on average, lasts 29.53 days, so a lunar month can last 29 or 30 days (the Lunar Calendar is a total of 354 days a year compared to the Solar/Gregorian Calendar of 365.25 days a year). Therefore, in those Lunar Calendars in which each month begins on the day of the 初一 new moon, the full moon falls on either the 初十四或十五 14th or 15th day of the lunar month. Usually, there are 12 lunar months in a Chinese calendar year. In order to catch up with the Solar/Gregorian Calendar, which averages 365.25 days in a year, an extra month is added to the Chinese calendar every two or three years. As a result, Lunar New Year falls on different dates each year (in the Gregorian calendar) between January 21 and February 21 and this TIGER year's 正月初一 Day 1 falls on the Gregorian Calendar of February 1, 2022.

2022 Chinese New Year is just about 2 weeks from now, it is likely that most restaurants are fully booked now for the CNY Reunion Dinner on the 31th January (and this is in Chinese Lunar Calendar is the 29th day (年二十九) of the 12th month of the year since there isn't a 30th day this the end of the "COW" year).
盆菜 Poon Choi is a "big bowl feast" with layers of food served either in large wooden porcelain or metals basins called 盆 Poon (Cantonese). 盆菜 Poon Choi is a 粵式節日大餐 Cantonese festival meal popular in 廣東 Guandong or 香港 Hong Kong. According to tradition, Poon choi was invented during the 宋代晚期 late Song Dynasty. When 蒙古軍 Mongol troops invaded Song China, the young Emperor fled to the area around 廣東省 Guangdong Province and 香港 Hong Kong. To serve the Emperor as well as his army, the locals collected all their best food available, cooked it. But there were not enough serving containers available, so they put the resulting meal in 木製洗臉盆裡 large wooden washbasins.
Poon Choi inside the large metal basin includes ingredients such as 豬肉 pork, 牛肉 beef, 羊肉 lamb, 鴨肉 chicken, duck, 鮑魚 abalone, 人參 ginseng, 魚翅 shark fin, 魚鰾 fish maw, 蝦 prawn, 蟹 crab, 香菇幹 dried mushroom, 魚丸 fishballs, 魷魚 squid, 鰻魚乾 dried eel, 蝦米 dried shrimp, 豬皮 pigskin, 豆腐 bean curd and 白蘿蔔 Chinese white radish. Everyone in the village is invited for this big feast for celebrations of 宗教儀式 religious rituals, festivals, special occasions and wedding banquets in the open areas of villages. To prepare such an elaborate bit pot of ingredients usually take 2-3 days of preparation time.
In the midst of Covid-19 last year, 盆菜 Poon Choi was a popular "Take-away FROZEN" dish for the CNY ReUnion Celebrations offered by many Hotels, Restaurants, and even some Grocers, or even online stores such as Lazada or Shopee. To prepare the dish, it is to be "DE-FROZED" for few hours and then "STEAMED" for about an hour.
