濂記肉干雞絲 "Lianji888 Dry Meat" offers 10 variants of Sandwich Buns from rm$4 to rm$6 with choice of 肉干 Dry meat, 熱狗 Hot Dog, 台灣香腸 Taiwanese Hot dog, 火腿 Ham and with or without 雞蛋 Egg or 奶酪 Cheese. Today is the 3rd visit to the stall since its opening last year, and still satisfactory, especially the rm$5 "肉干雞絲配蛋麵包 Dried meat Chicken floss w/egg bun" which comes with generous amount of 雞絲 chicken floss in a hot bun.

Fun fact: 肉乾/肉脯 Dried meat or also called "Bak Kwa (in Hokkien)", refers to meat that has been 醃製 cured and 及乾燥處理 dried, usually made from 雞肉 chicken, 豬肉 pork or 牛肉 beef (雞肉乾 chicken jerky, 豬肉乾 pork jerky or 牛肉乾 beef jerky). The jerky is mostly folded and wrapped in a few pieces of 白色吸油紙 white absorbent paper. In order to preserve for a longer period of time, 真空 vacuum is usually the mainstay in recent years. After this treatment, the jerky can be stored for a long time.
肉乾 Jerky is popular among Chinese families in countries such as 馬來西亞 Malaysia and 新加坡 Singapore. It is a very symbolic 過年禮 Chinese New Year gift and is often used as a 過年必吃食品 must-eat food during the Chinese New Year.
Its origins can be traced by to 古代中国 ancient China, specifically the province of 福建省 Fujian, during a time when poverty was widespread. Pork (or meat in general) was considered a luxury food item that not everyone could afford, so it was reserved for 農曆新年 Lunar New Year. These succulent barbecued meats are first sliced into thin strips and dipped in a sugar and spice marinade before being air-dried and cooked over a hotplate. As many 福建移民 Hokkien immigrants from 福建省 Fujian made their way to the 馬來群島 Malay Archipelago (now 馬來西亞 Malaysia) probably in early 15th century to escape a life of poverty then, the 福建人 Hokkiens reputedly brought this delicacy with them. Since then "Bak Kwa" has since been tweaked to suit local tastes which is sweater version. The Malaysian and Singaporean versions are usually 木炭上烤製 grilled over charcoal after being air-dried, which gives the meat a 煙熏味 smokier flavor. The local version is sweeter than the original. There are few main varieties of "Bak Kwa" in Malaysia and Singapore, 豬肉/雞絲 minced pork or chicken and 豬肉/雞肉乾 sliced pork/chicken, and 牛肉乾 Beef dry meat isn't that popular. Today, the dry meat is not just a Chinese New Year delicacy but also available year round in specialty Dry Meat shops or as a sandwich bun for breakfast or lunch!
