Thoughts:: Unfortunately, the Pan Mee stall not open today as that was my target for an early lunch after the HRV's Wash & Wax session. At Restoran Wai Kwan, I have tried the normal rice noodle and I thought I should try the 虾米 "Har Mai"/Dried Shrimps rice noodle variant which is at $4 per plate (2 pieces); other options are curry at $4 and normal (without dried shrimps) at $3 per plate.
The Rice noodles are kept in the bamboo steamer baskets, therefore the rice noodles are served hot (this is nice), topped with sweet source and sesame seeds, sprinkled with 干咸菜 chopped dried pickles.
To-date, I am not sure about the difference between 米浆粉 Rice Noodle vs 猪肠粉(齋腸) Chee Cheong. I would think that 老鼠粉 Rat Noodle, 河粉 Hor Fun, 肠粉 Chee Cheong Fun or 米浆粉 Rice Noodle are all made of 米浆 Rice Pulp! (at least that's what people describe how each of them are made in the Web). Where Rice is allowed to be soaked for several hours until it is really "soft" to be grind into Rice Pulp for the making of those different kinds of "noodles" variants. Just that perhaps in the process of making specific types by different recipes creates different textures and noodle types. Some families may have generations of recipes handed down allowing them to make rice noodles which taste better than others, maybe!
According to the Balinese man who is working at the stall that his boss brings the rice noodles fresh from Ipoh everyday!
