Just like Nasi Lemak, 叻沙 Laksa is probably one of the most celebrated dish in Malaysia (and maybe Singapore as well). The curry noodle dish has its influences from Chinese, Malay, and other cultures. At its very core, what makes the flavorful thick creamy curry laksa soup is the concoction of 椰奶 coconut milk, lots of 紅辣椒乾 dried red chilies, chopped shallots, sour asam, 咖哩粉 curry power, garlic cloves, coriander, 蝦醬 shrimp paste, 香茅莖 lemongrass stalks etc. When done well, the result is a laksa gravy that is semi-thick and creamy with a variety of flavors! The usual noodle that goes with curry laksa is probably "粗米粉 thick rice noodles" called the laksa noodle or vermicelli (or "米粉 thin white noodles"), although some prefer the thicker "福建麵 hokkien noodles" or "濑粉 Laifun", while East Coast's 叻參 Laksam uses rice noodles like look like 豬腸粉 Chee Cheong Fun except that it is the Halal Malay version! However, I ask for 雲吞麵條 Wanton mee for today's Nyonya Curry Laksa!砂拉越叻沙 Sarawak Laksa (砂拉越州 Sarawak)
The meat that topped the noodle dish can be 雞肉 chicken, 小蝦或大蝦 small or big prawns, 魚肉 fish or even 龍蝦 lobster and 螃蟹 crab (mine today came with 叉燒 Charsiew)!
The "娘惹咖哩叻沙 Nyonya Curry Laksa" or sometimes also called "Laksa Lemak or Fatty Laksa", is from the state of Malacca, is a 土生華人(峇峇娘惹料理) Peranakan dish. Nyonya Curry Laksa's creamy broth (often cooked with prawn shells and chicken bones) are usually thick with coconut milk and fiery, with the colors of a flaming sunrise. Toppings including 魚餅切片 Fish cakes slices, 豆腐卜 Tofu Pok, 蛤蜊 Cockles, 煮蝦去皮 boiled and peeled Prawns, 煮雞蛋 Boiled egg or 鵪鶉蛋 Quail egg, additional 峇拉煎 Belachan, 叻沙葉 Laksa leaf, maybe some 豆芽 bean sprouts (mine today came with 黃瓜絲 julienne cucumber) and 半片青檸 a half Lime.
