Thoughts: Khanom khrok or coconut-rice pancakes is a traditional Thai dessert. They are prepared by mixing rice flour, sugar, and coconut milk to form a dough using some kind of heat indented frying pan. The Khanom khrok are usually prepared with 2 batters: one sweet and one salty, and some vendors with even put coloring in the batters to create colorful pancakes.
The street vendor visited today offers a 4 pcs or 8 pcs version at 20Bht and 30Bht respectively. Mine was a mix of vegetable and corn, the sweet version. I think maybe the savory version with scallions and shrimp toppings likely more interesting.
Interestingly, the Khanom khrok was well-known since Ayutthaya period, and similar dishes can also be found in Bangladesh, Myanmar (where it is known as mont lin maya), Laos, Cambodia, and Indonesia (where it is called serabi).
