Thoughts: Have tried this vegetarian restaurant several times (this is the 4th visit) since its opening January this year. Except for the "素猪脚醋饭 Vegetarian Black Sweet Soy Vineger Trutters w/Rics" (14.07.2018), was satisfied with few of the recipes tried from their menu.
For lunch, its the "八宝粥 Eight Treasure Porridge". Nice! The porridge itself already comes with 马铃薯+姜+红萝卜+鲍鱼菇+炒包菜+something..." (Potato + Ginger + Carrot + aAbalone mushroom + Fried cabbage+etc" , and you can order an extra 2 side dishes from 5 side dishes choices. For side dish, ordered the 菜脯煎蛋 "salted egg w/dried radish" & 梅菜焖花生 "stew picked mustard w/peanut".
The name "八宝粥 Eight Treasure Porridge" itself is an important dish in the history of Buddhism! Traditionally, it is a dish that is to be eaten on the 臘八 "Laba" Festival, which is the 農曆十二月初八 8th day of the 12th Lunar Month of the year, as such it is also referred to as "臘八粥 Laba Congee". This tradition seems to have been around for more than 1000 years in China! Having its roots in Buddhism, it is said to be eaten to commemorate 釋迦摩尼成道日 Shakyamuni Day of Enlightenment! Originaly the congee is used only as part of prayer offerings and not consumed (during the 漢朝 Han dynasty) but later people start to enjoy the meal and it then evolve into different ways of preparaton throughout different periods of time!
The basic ingredients of the "臘八粥 Laba Congee", not the least are 大米, 花生, 绿豆, 红豆, 莲子 & 红枣 (Rice, Peanuts, Mung beans, Red beans, Lotus seeds & Red dates) but the ingredients can vary, but nevertheless always vegetarian based.
Although the official operation time starts at 10:30am, I think Mable Veggie Restaurant opens earlier for its breakfast menu.
