Thoughts: This is like a Do-it-yourself dish, does seem to be very "Japanese"! But "Poke" seems to be a "Hawaiian" Dish (Wikipedia), I would have thought its either Japanese or Vietnamese. Wikipedia says "Poke is diced raw fish served as either an appetizer or as a main course and is one of the main dishes of Native Hawaiian cuisine."!
The final version I got is a small "hill" in a plate with Salmon cubes, seaweed, a lot of crunchy stuff, beans, and zucchini (cucumber). I think it is kind of "healthy", interesting!
