The stall, run by the current proprietor Ah Tatt and his elderly mother, has been operating since 1979. While the 豬腸粉 Chee Cheong Fun (steamed rice rolls) themselves are a standard dish found in many places, the distinctiveness of this particular stall lies in its traditional preparation methods and its specific, family-recipe home-blended sauces:
• 黑甜醬 Dark sweet sauce (thi chio): A key component of their specific Penang style.• 蝦膏 Prawn paste (heh ko): This uniquely pungent paste is a unique addition.• 辣椒醬 Chili sauce: Also part of their specific, house-made condiment selection.
Malaysian 豬腸粉 Chee Cheong Fun (Rice Noodle Rolls) varies by region, primarily differing in their sauces and fillings.
- 檳城風味腸粉 Penang style Chee Cheong Fun is served with the 蝦膏 Prawn paste and was told sometimes the fillings comes with finely 切碎的山藥豆 shredded yam bean (jicama) plus topped with sesames seeds and even fried shallots.
- 怡保風味的腸粉 Ipoh style Chee Cheong Fun which is known for its silky, tender rice noodle sheets (could it be due to the local spring water!), often served simply with 甜醬 sweet sauce, 醬油 soy sauce, 蔥油 shallot oil, 芝麻 sesame seeds, 炸蔥 fried shallots, and a side of 辣醃青辣椒 spicy pickled green chillies, though a richer 蘑菇咖哩 mushroom curry.
- 安順風味豬腸粉 Teluk Intan style Chee Cheong Fun is a distinct Malaysian version, known for its unique brown hue from dried shrimp and mushrooms, often 直接混入豬腸粉中 mixed directly into the rice noodle batter, served with savory fillings like 醃蘿蔔 preserved radish (菜脯 chai poh), topped with 焦糖紅蔥頭 caramelized shallots, and traditionally accompanied by 醃青辣椒 pickled green chilies for a tangy kick.
- 吉隆坡風味腸粉 KL style Chee Cheong Fun is a unique Malaysian dish featuring soft, steamed rice noodle rolls cut into chunky pieces, drenched in a distinctive 鹹甜棕色醬汁 savory-sweet brown sauce (often soy-based with 豆醬 bean paste/辣椒 chili), topped with 芝麻 sesame seeds & 炸紅蔥頭 fried shallots, and commonly served with a side of 釀豆腐 Yong Tau Foo with fish and/or minced pork paste stuffed into tofu, and a variety of vegetables like bitter gourd, egg plant etc.
- 港式腸粉 Hong Kong style Chee Cheong Fun (steamed rice noodle rolls) are delicate, silky-smooth, paper-thin rice sheets, often filled with shrimp or char siu (BBQ pork), and traditionally served simply with light soy sauce and some steamed vegetables on the side. This type of Cheong Fun is a popular item in Dim Sum shops in most cities throughout the country.
