Interesting facts about 蕹菜 Kangkung (Water Spinach) which is reported to come with a 低升糖指數 low Glycemic Index of 15 (a Low GI food); the 莖 stem contains the highest concentration of 粗蛋白 crude protein, 纖維 fiber, and 脂肪 fat, while the 葉子 leaf has 含有大量碳水化合物 high amounts of carbohydrates. The nutrients in 蕹菜 Water spinach is almost equal to 牛奶 milk, 香蕉 banana and 和柳橙 orange. It is also 富含抗氧化劑 high in antioxidants, which has been shown to 降低糖尿病患者的血糖水平 lower glucose levels, 增加胰島素敏感性 increase insulin sensitivity, and 防止氧化 prevent oxidative, 和壓力引起的變化 stress-induced changes in patients with diabetes.
As for 魚肉釀豆腐 Fish paste Yong Tao Foo, it is best to steer away (or less of) the fried items and opt for 豆腐釀豆腐 tofu and 蔬菜釀豆腐 assorted vegetables YTF. And try to skip the sauces, especially the Chili sauce which contains even higher in sugar, sodium and calories compared to the brown sauce (or avoid both). The Yong Tao Foo (without the rice, noodles or wanton), is generally a "低碳水化合物 Low Carb" and "高纖維 Higher Fiber" (if you choose the vegetable YTF). Vegetable Yong Tao Foo with fish paste should have a 降低升糖指數及升糖負荷 Lower Glycemic Index and Glycemic Load. AND in general, 1 piece of Fish Paste Yong Tao Foo will have at least 80-100+ Calories.
I really love my Yong Tao Foo to go with 豬腸粉 steamed Cheong Fun (Malaysia style Chee Cheong Fun)! The "CCF" is however a "High Carb (26g+ Carbs)" and "High Calories" (140+ Calories each Roll) food, it also boost a High GI of 85 and High GL of 29. So, having a plate of 2-3 Rolls of Chee Cheong Fun, several fried Yong Tao Foo and topped with Chili and Brown Sauce not only adds up the Calories, it will also be High in Calories, Carbs, Sugar, Sodium, High in GI and High in GL
