蕎麥麵 Soba noodles are a Japanese alternative to the 鬼佬麵食 regular westerns pasta or maybe the 華人麵食 Chinese noodles! 蕎麥麵 Soba noodles are made entirely or in part with 無麩質蕎麥粉製成 gluten-free buckwheat flour, which is said to be both 不含麩質 gluten-free and full of 健康的蛋白質 healthy proteins, 維生素 vitamins, and 礦物質 minerals. 蕎麥麵 Soba and 烏冬(龍)麵 Udon are two types of popular noodles common in Japanese restaurants. They can both be eaten either 熱食 hot or 冷食 cold, and there are many different variations in different regions of Japan. 蕎麥麵 Soba is said to have 起源於中國 originated in China and been brought to Japan toward the 日本繩紋時代末期 end of the Jomon period (10,000 BC to 300 BC). There are also records of 蕎麥粉 buckwheat flour, from which 製作蕎麥麵 soba noodles are made, being grown to help fight a 應對飢荒 famine in the 奈良時代 Nara period (710 to 794). 蕎麥 Buckwheat is a highly 營養豐富的穀物 nutritious grain, especially rich in 維生素B vitamin B. The flour produced by extracting the inside of the grain is white, but if the skin is also used, the flour takes on a unique flavor and turns a familiar 灰色 grayish color of the Soba noodles served in Japanese restaurants.
