Thoughts: Whenever one walks into an Indian/Malay Restaurant, behind the "hot food counters" are usually a "Sea of Red"! One would feel the hot and spicy even without tasting the food itself.
For breakfast, I am trying the Roti Tampal here at Sri Melur Jaya, which is a variant of Roti Telur. Recently I had another variant which is called Roti Tampar (印度半熟蛋煎饼) which like a sunny-side up egg on an Indian Bread. Roti Tampal and Roti Telur however, seems to the a closer variant with both completely cooked eggs. Roti Telur's egg seems to be well spread within the dough compared to Roti Tampal.
Maybe each restaurant makes the Roti Telur, Roti Tampar, and Roti Tampal differently.
If you like "butter and sweet" variant of Roti Canai, then the Roti Boom is the answer, but it is definitely oiler than the Roti Canai! Dipping the sweet Roti Boom into Dhal and Sambal is interesting!
