"口水雞 Kou Shui Ji", the direct translation of the dish "saliva chicken" certainly doesn’t sound particularly appetizing! "Grandma" recommended the light spicy version and there is also the "麻辣 Mala spicy" version as well as this dish is one of the most famous dishes in 四川料理 Sichuan cuisine (known for its Spicy and Mala dishes). The chicken is first steamed before being 泡在冰水里 dunked in iced water to firm up the skin. The chicken is then bathed in a numbingly spicy chili sauce with toasted peanuts and sesame seeds and a garnish of green onion. The dish is usually eaten 冷開胃菜 cold as an appetizer. "口水雞 Kou Shui Ji" definitely goes will a mugs of cold beer!

There was a 吳苑茶館 Wuyuan Teahouse, which first opened in 1911, where 生煎饅頭 Pan-fried Mantou was most famous at that time. Later, Pan-fried buns became popular in 江浙滬一帶 Jiangsu, Zhejiang and Shanghai. In the 1920s, 生煎饅頭 Pan-fried Mantou/Buns popularity entered the big Shanghai, and were sought after by the public because of its affordability. After the 1930s, 上海飲食業 Shanghai's F&B industry starting to have professional shops for pan-fried steamed buns, with fillings of 雞 chicken, 蝦 shrimp and other varieties.
Highly recommended by "GrandMa", the Main course today is a bowl of rm$2 "小米粥 Millet porridge" & a $15 Chicken platterrm "口水雞 Kou Shui Ji". According to the Grandma, 小米粥 Millet porridge is a staple food of the 紅軍 Red Army under 毛澤東 Mao ZeDong. The recipe of 小米粥 Millet porridge couldn't be easier, using just 小米 millet, 水 water and 鹽 salt. A 肉桂棒 cinnamon stick and 荳蔻莢 cardamom pods infuse the porridge with a warming, sweet flavor. Millet is a good source of 蛋白質 protein, 纖維 fiber, 維生素 key vitamins, and 礦物質 minerals. The potential health benefits of millet include 保護心血管健康 protecting cardiovascular health, 預防糖尿病 preventing the onset of diabetes, helping people achieve and maintain a healthy weight, and 控制腸道炎症 managing inflammation in the gut.
