The "九轉大腸 Nine turn large intestine"  originated in the 光緒初年 early years of Emperor Guangxu of the  清朝 Qing Dynasty. It was first created by 九華樓酒店 Jiuhualou Hotel and was originally called "紅燒大腸 Red-Braised Large Intestine". On September 10, 2018, "中華美食 Chinese Cuisine" was officially released. 九轉大腸 Nine turns of large intestine was selected as one of the 魯菜十大經典名菜之一 top ten classic dishes in 山東菜 Shandong cuisine.

A further story of what the name "九轉大腸 Nine turn large intestine" is that once, 杜老闆 Mr. Du of 九華樓酒店 Jiuhualin invited a group of 地方紳士 local gentlemen to a banquet. After eating the "紅燒大腸 Red-Braised Large Intestine", everyone praised it highly. They talked about the taste of 酸 sour, 甜 sweet, 苦 bitter, 辣 spicy and 咸 salty. Among them, a scholar wanted to show off his talent and cater to the host's fond of the number "九 nine" as the 吉祥數字 prosperity number. The scholar changed the name of the braised large intestine to "九轉大腸 nine-turn large intestine" to show the complexity and fineness of the chef's cooking skills. The scholar explained: “九”是個吉祥數字 "Nine" is an auspicious number. 上至皇親國戚 From the royal family to the common people, 下至黎民百姓 everyone likes the number "nine"; in addition, the 道家煉丹 Taoists have "九轉金丹 nine-turn golden elixir" that can bring people back to life. The dish thus becomes as delicious as taking the "九轉大腸 nine-turn golden elixir". After hearing this, everyone was amazed. Since then, 九華林酒樓的招牌菜餚 Jiuhualin Restaurant's signature dish, 九轉大腸 Nine-Turn Large Intestine, has gained fame and spread throughout 山東菜 Shandong.
