原產於中國 Originally cultivated in China and brought to Japan by the Chinese. 蕎麥原產於亞洲 Buckwheat is native to Asia but it’s 與小麥無關 not related to wheat! It was first cultivated by humans around 8,000 BC when farmers noticed that certain plants 可以壓碎並製成麵粉 could be crushed and turned into flour. The earliest evidence of soba noodles is from the year 1115. The monks who made these noodles were 佛教僧侶 Buddhist, as evidenced by their practice of making soba without oil or salt. Many Buddhist monks still make and eat soba today. The ingredients used to make this sesame paste-based dish haven’t changed much over time: 蕎麥粉 buckwheat flour (also called 蕎麥粉 Soba flour), water, and roasted sesame seeds are still the main components of modern-day soba dishes. In Japan, the first mention of soba in Japanese literature dates back to the 八世紀 8th century when it was 用作神社的祭品 used as an offering at shrines. After Japan’s unification, soba production steadily increased and became a staple for commoners who could not afford rice. At this time, Buddhist monks and nuns began making their noodles 用蕎麥粉製作麵條 from buckwheat flour using a wooden mortar and pestle.
蕎麥麵 Soba noodles are made entirely or in part with 無麩質蕎麥粉製成 gluten-free buckwheat flour, which is linked to 改善心臟健康 improved heart health, 血糖 blood sugars, 發炎 inflammation and 預防癌症 cancer prevention. They’re similar in nutrition to 全麥義大利麵 whole-wheat spaghetti and a 良好的植物性蛋白質來源 good plant-based protein source. In one Japanese study, a 50-gram serving of soba noodles had a GI of 56, compared to a GI of 100 for white rice. (Foods that have a GI below 55 are considered Low GI food and Foods with a GI between 56 to 69 are considered moderate GI) AND therefore the 蕎麥麵 Soba (Buckwheat) noodles can be considered a moderate GI food. A low glycemic diet could be beneficial for weight loss and diabetes.
