Parking: MBPJThoughts: The earliest recorded mention of salted duck eggs was in the 齐民要术 Qimin Yaoshu, 一本古代农牧情况的钜著 an ancient Chinese agricultural text which dates by somewhere around the 533-544 AD. The traditional process of making the 咸鸭蛋 Salted duck eggs or "咸蛋 Hamdan" may not have changed too much by soaking duck eggs in 盐水 brine, or packing each egg in damp, 咸木炭 salted charcoal. However in places like the Philippines and Malaysia, the duck eggs wrapped in a salted paste of clay or ash.
Salted duck egg can be found in a very common Chinese dish "蒸三王蛋 Steamed 3 Yolks Eggs", a steamed egg custard made with chicken egg, salted egg, and century egg. Otherwise, there may not be too much yearning for salted duck egg except for its appearance inside a 月饼 Moon Cakes during 中秋节 Mid-Autumn Festival and inside a 粽子 Zongzhi during the 端午节 Dragon Boat Festival.
Singaporeans probably re-invented the craze for Salted egg dish as a Gravy in a Crab dish! But the craze for "everything Salted Egg" in Malaysia and Singapore probably started after a Malaysian food blogger posted about SS2 Le Bread's Salted egg Croissant in 2015, Soon after that in 2016, creative chefs came up with recipes such as the salted egg yoke fish and chips, salted egg yoke chicken wing, burgers and even Udon and Parata etc! Every other restaurants soon has to include 1 or 2 salted egg yoke recipe in their menu recipe with salted egg yoke besides that traditional "蒸三王蛋 Steamed 3 Yolks Eggs".
The croissants, with a taste of Salty-Sweetness plus Flaky-Gooey yummy Salted Molten egg yolk custard probably first appeared in Hong Kong. The craze for the sweet-savory albeit Sinful pastry became an instant hit in Malaysia and Singapore in 2015-2016. In Klang Valley, besides SS2/72 "Famed Overnight" Le Bread Days, there is also Bread Plan. Another pastry shop "Dotty's Pastries & Coffee" in TTDI also offers the molten-salted-egg Croissant and am sure many more in Klang Valley.
Today's Lunch was at SS26's Milligram Cafe to sample its rm$7.50 Salted egg Croissant! The Croissant is delivered as Cut-in-Half with the yellow molten salted egg gravy bleeding out from the crispy and flaky layered Croissant. That sweet and savory taste challenges the taste buds but 100% went well with the Latte! First time trying out the Salted egg Croissant, quite satisfied and definitely looking forward to Le Bread Days and Bread Plan, both in SS2.
