The introduction of 佛教 Buddhism to Japan in the 6th century led to the 素食主義的興起 adoption of vegetarian practices, with some 佛教寺廟 Buddhist temples and 寺院 monasteries adhering to strict vegetarian diets. Therefore it is no surprise that the 日本文化 Japanese culture has a rich history of vegetarianism that was heavily influenced by 佛教傳統 Buddhist traditions. The traditional Buddhist vegetarian cuisine is called 精進料理 Shojin ryori, characterized by dishes made solely from plant-based ingredients. The ingredients are mainly 當季蔬菜 seasonal vegetables and 山中野菜 wild vegetables from the mountains. 不使用魚 No fish, 肉 meat, 大蒜 garlic, 洋蔥 onions or other foods with 氣味濃烈的食物 strong odors are used.
