壽司三昧 Sushi Zanmai was founded in 2001 by 木村清 Kiyoshi Kimura. Mr Kimura stablished the restaurant chain with the goal of reviving the 築地魚市場 Tsukiji fish market, which was facing declining business. Kiyoshi Kimura is the President of Kiyomura Corporation and owner of Sushi Zanmai Japan.
馬來西亞壽司三昧 Sushi Zanmai Malaysia was founded in 2006. The restaurant chain was established in Malaysia to bring authentic Japanese flavors with a modern twist to local food enthusiasts. Sushi Zanmai, originally from Japan under the name "Sushi Zanmai Uogashi K. K." (K. K is the name of Kiyoshi Kumra who is the founder of Sushi Zanmai). This style is particularly suited for ingredients that are too delicate or soft to hold on 傳統握壽司 traditional Nigiri (rice-covered sushi). 軍艦壽司 Gunkan sushi typically consists of a small, oval-shaped ball of sushi rice that is wrapped in a band of nori seaweed. The seaweed creates a "bowl" that can be filled with toppings like 鮭魚子 Salmon Roe (ikura), 海膽 Sea Urchin (uni), 螃蟹 Crab, or even more adventurous fillings like 韃靼和牛肉 Wagyu Beef Tartare.
