The noodle shop uses "西刀 Ikan Parang (Wolf Herring)" or "Sai Dou" in Cantonese as the main fish meat for making their signature fish balls. Wolf Herring is a common fish found in wet markets in Malaysia, and is one of the most popular type of fish to be made into Fish Balls.
