Nice Hokkien Mee but can do better; my good version of Hokkien Mee must be the following
. Crunchy pork lard (soggy here)
. Sweet, Bitterly taste (ok here)
. Not overly salty (ok here)
. Thick noodles should be free of alkaline (none tasted here)
. Noodles should not be soggy nor too stiff to bite (a bit stiff here)
. Smokey aroma (lacking here)
. Good Wok Hei (some here but not enough)
. Well marinated pork slices + prawns + cabbage (2 big prawns and too little pork slices)
. Perferred to be stir fried with charcoal-fire (not here).
I was a little too picky today, or maybe just for today the Chef wasn't at his best.
